Season the prime rib roast evenly with Traeger Prime Rib Rub. Wrap in plastic wrap and refrigerate for 24 hours.

    Ingredients
    • 1  (5-7 bone) prime rib roast

    • As Needed Traeger Prime Rib Rub

  • 2

When ready to cook, set the Traeger temperature to 500° and preheat with the lid closed for 15 minutes.

    500 ˚F / 260 ˚C

  • 3

Insert the probe into the thickest part of the roast, avoiding the bones and any large pockets of fat. Place the prime rib, fat-side up, directly on the grill grates, close the lid, and sear for 30 minutes (starting at a higher heat will help render the fat and develop a crispy crust).

    500 ˚F / 260 ˚C

  • 4

Reduce the Traeger temperature to 300℉. Continue to cook the roast until cooked your desired temperature (120℉ for rare, 130℉ for medium-rare, 140℉ for medium, or 150℉ for well-done) is reached, 3-4 hours more. Check the internal temperature at 30-minute intervals throughout the cook time.

    300 ˚F / 149 ˚C

    120 ˚F / 49 ˚C

  • 5

Remove the roast from grill and let rest for 30 minutes before carving. Enjoy!
