1 Small sugar pumpkin
As Needed Olive oil
1 Can sweetened condensed milk
1 Cup whole milk
2 Tablespoon smoked simple syrup (homemade or store-bought)
1 Teaspoon pumpkin pie spice
pinch of salt
8 Ounce smoked cold brew coffee
cinnamon, to serve
whipped cream, to serve
shaved nutmeg, to serve

    When ready to cook, set the Traeger temperature to 325℉ and preheat, lid closed for 15 minutes.

    325 ˚F / 163 ˚C

    Cut the sugar pumpkin in half, scoop out the seeds and discard. Place the pumpkin halves cut side up on a baking sheet and brush lightly with olive oil.

    Place the sheet tray directly on the grill grate and cook 45 minutes or until the flesh is tender. Remove from heat and place on the counter to cool.

    When the pumpkin is cool enough to handle, scoop out the flesh and mash until smooth.

    Place 3 Tbsp of the pumpkin puree in a separate bowl and reserve the remaining for another use.

    Add the sweetened condensed milk, whole milk, Traeger Smoked Simple Syrup, pumpkin pie seasoning and salt to the pumpkin puree. Whisk to combine.

    Pour the cold brew over ice, add desired amount of pumpkin spice creamer and top with whipped cream, cinnamon, and shaved nutmeg if desired. Enjoy!
